i.e. Pi day!!
My high school has always done something festive for pi day, so ever since I graduated [wow I feel old] I’ve always tried to make something pie related!
So for this year I made mini apple pies! It was actually more like 1/2 pie and 1/2 cobbler, mostly cuz I didn’t want to make the lattice pie top and I had extra cobbler topping in the freezer. It was a combo of this pie crust recipe, this mini pie recipe (minus the lemon and tapioca), and the cobbler topping part of this recipe.
Essentially what I did was put together the mini pies like the recipe says but instead of the lattice top I put the cobbler topping on the top. And they turned out like these beauties:
Okay this isn’t a particularly flattering picture, but trust me, they look beautimous!
Exhibit A:
Exhibit B:
And they tasted as good as they looked!!
Yo dawg, I herd you like pie, so I put pies in the shape of pi on pi day…
Okay it may look weird (the white chunks are the cottage cheese chunks), but you can use a food processor to blend up the batter to make the chunks be less obvious! Also it’s important to note that these cakes can taste pretty [p]eggy, so if you want to tone that flavor down, just add more cottage cheese.
See?? Aren’t they beautiful? ( Haha I messed up flipping the one on the right.)
So good!
That’s right, kids, butter and powdered sugar! Haha okay you can have whatever topping you want on pancakes, but I fully endorse butter and powdered sugar.
It really did smell better than it looks!
I was quite paranoid about burning the oats, so I was a bit spatula happy with the egg flipping. Words of advice: use lower heat; and if the oats get a little too toasty, almost to the point of burning smell, that’s okay. It makes it crunchy and adds a great texture to the dish!
Scrugggggggggg.
Still working on food presentation.
When the yolks are over easy/medium, it’s super tasty cuz the oats are used to sop up the excess yolk!
I know it looks questionable. (Still working on the whole “presentation” part of the food-making art.) When I made this for breakfast before work one day, my mom and step-dad gave me weird looks, and was like “Pesto? For breakfast?” And I wish I responded with “Why not? It worked in Blazing Saddles!” I wasn’t super witty that morning. [Ten points to whoever gets the reference.]
The flavors work quite nicely! Though the fact that the parmesan doesn’t melt kinda threw me off texture-wise, but it was still delicious!
Imagine licking that plate. Yummmmmm! [Bad color combo. But hey, we won the civil war!]

Doesn’t that look delicious?
Melty cup! (I knew that cup de la melt would happen, I just wanted to see it for myself/conduct a little experiment and see how melty it would get.)
Derpy-looking, right? But so good! Honestly, I feel like this is for the most part a guilt-free tasty to inhale at your heart’s (or stomach’s) content. I ate six of them in one sitting and didn’t feel too fatn’sassy.
I told you it was hollow! [
[I’m imagining the horrified/disgusted look on your face] Hahaha!
Yummm!
There’s really not a good picture of the post-blend product. It did taste better than it looked! Though the texture was pretty funky.
Pokeball, anyone?
Hahahaha gnarly.
In my defense, the doritos added a nice flavor to the eggs. Kinda like how a person would put random mesquite barbecue seasoning to spice up their chicken or something.
Just kidding, it looks gross. But, hey, it tasted good!
