i.e. Pi day!!

My high school has always done something festive for pi day, so ever since I graduated [wow I feel old] I’ve always tried to make something pie related!

So for this year I made mini apple pies! It was actually more like 1/2 pie and 1/2 cobbler, mostly cuz I didn’t want to make the lattice pie top and I had extra cobbler topping in the freezer. It was a combo of this pie crust recipe, this mini pie recipe (minus the lemon and tapioca), and the cobbler topping part of this recipe.

Essentially what I did was put together the mini pies like the recipe says but instead of the lattice top I put the cobbler topping on the top. And they turned out like these beauties:IMG_1088Okay this isn’t a particularly flattering picture, but trust me, they look beautimous!

Pancake day!

I know that technically the pancake day(s) were over a week ago (i.e. ihop pancake day was March 7th and the “fat tuesday” pancake day was February 28th) but honestly, pancakes ought to be celebrated every day cuz they’re delicious! So here we go, a pseudo pancake day post! Though I actually made the pancakes on the ihop pancake day, so I was on the ball there!

So the pancakes I made weren’t the typical kind of pancakes that my friends (and my stomach) has grown to love. These were made with cottage cheese! Recipe hither.

Now don’t you go cringing at the fact that cottage cheese was the main ingredient! Hear me out, it’s pretty good!

IMG_1056Okay it may look weird (the white chunks are the cottage cheese chunks), but you can use a food processor to blend up the batter to make the chunks be less obvious! Also it’s important to note that these cakes can taste pretty [p]eggy, so if you want to tone that flavor down, just add more cottage cheese.

Okay I think I’m caught up with food concoction posts after this guy. This is from November!

A friend suggested adding oats on fried eggs, so I decided to give it a try.

First, toast the oats til it smells all popcorn-like:img_0517It really did smell better than it looks!

Then crack eggs on said oats:img_0518I was quite paranoid about burning the oats, so I was a bit spatula happy with the egg flipping. Words of advice: use lower heat; and if the oats get a little too toasty, almost to the point of burning smell, that’s okay. It makes it crunchy and adds a great texture to the dish!

Still catching up on my food concoction posts. This is from October!

So I’ve been on a pesto kick for the past long time. I distinctly remember the time period where I got introduced to its deliciousness. It was winter 2015 and I was working at a dining hall making sandwiches. I saw that a lot of people would put pesto as their sauce of choice, and I thought to try it myself. Best decision!

Fast forward to my October self. I saw on one of those handy snapchat story whats-its about breakfast suggesting pesto and egg and parmesan together. So I tried it!

[Totally related, I became quite good at making egg-related breakfast dishes because of working at the dining center. I guess you could call me Peggy! Get it? pEGGy. Hahahaha]

This is what the dish looked like before consumption:img_0400I know it looks questionable. (Still working on the whole “presentation” part of the food-making art.) When I made this for breakfast before work one day, my mom and step-dad gave me weird looks, and was like “Pesto? For breakfast?” And I wish I responded with “Why not? It worked in Blazing Saddles!” I wasn’t super witty that morning. [Ten points to whoever gets the reference.]

During consumption:img_0401The flavors work quite nicely! Though the fact that the parmesan doesn’t melt kinda threw me off texture-wise, but it was still delicious!

Beircakes, beircakes, oder ich fall um, juchhe!

Hello! Been a while! I’ve meant to do this post back when this food was concocted in August, but I procrastinated.. But better late than never!

Anyways, beer is tasty! And so are pancakes! But when you put them together, the outcome is questionable (not terrible, but not amazing).

Thought process: a friend’s grandma suggested to make pancakes, but substituting the liquid content for beer. And since all we had was a stout in vicinity, that was what we used! (I highly suggest using a hef instead of a dark beer for the future.)

It looked pretty when it was cooking! And during consumption too! (Yes, it was lacking powdered sugar, but c’est la vie! Butter would be enough!)

Fried egg + anything = delicious

Loosely based on this recipe. I didn’t have any of the sesame whats-its or green onions, but I had bacon so it still had some super deliciousness in it!DSCF2577Doesn’t that look delicious?

 

Oh and something funny: do you want to know what happens when you put bacon grease in a plastic cup?

Pop, lock and drop it

And by that I mean popovers. What are they, you ask? Essentially they’re muffin shaped breadthings that are surprisingly hollow when you bite into them. And they’re bomb-diggity with homemade strawberry jam!

DSCF2565Derpy-looking, right? But so good! Honestly, I feel like this is for the most part a guilt-free tasty to inhale at your heart’s (or stomach’s) content. I ate six of them in one sitting and didn’t feel too fatn’sassy.

Cream cheese on everything

I was craving cream cheese, then this happened:

Hear me out, cheez-its are a delicious contribution, both flavor and texture-wise. Just don’t add too much pesto on the sandwich. The flavors clash a bit.

Also, the stuff on the outside is more cream cheese. Meaning there was cream cheese on the inside and outside of the sandwich! Sandwich-ception! [Yo dawg I herd you liek sandwiches, so I made a cream cheese sandwich and put it in with your bread sandwich, so you can eat your sandwich while you eat your sandwich.] (Major *salutes* props to those who get the ‘yo dawg’ jokes.)

What happens when you blend jello?

Well technically not blend, more like foodprocess. Like the mix-y things that look like the things that the ghostbusters use, but smaller. Oh, google informed me that they’re called a handheld food processor. Got it! *read in English accent*

Anyways, when you blend jello you end up with jello [gouda thunk] but it’s the consistency of jam before you cook it. I didn’t blend straight up jello cuz that seemed too plain, so I chose to mix vanilla protein powder with the jello cuz, honestly, I was curious. And everything else in the kitchen that would normally be put in jello sounded disgusting (i.e. straight up fruit).

 

So here’s the result:

TBT: Green eggs and not ham

Okay major throwback, like June 2011 status. Back to when my weird food adventures were limited to what variety of food coloring I had on hand and whatever was in the cupboard. [I guess that’s kind of how it is now, huh?]

 

May I introduce green eggs and doritos:

DSCF0370In my defense, the doritos added a nice flavor to the eggs. Kinda like how a person would put random mesquite barbecue seasoning to spice up their chicken or something.

As long as you put the doritos in last minute and ate the eggs right away, the doritos wouldn’t get soggy and gross-textured.
